Apple and Jam Layer Cake


Introduction: This is a recipe which we found on a recipe sharing site. I used homemade apricot jam from homegrown apricots (but you can use any jam) and homegrown apples. This was a big hit in my family and I will surely make it again.


The Cake:

Ingredients: 
  • 3 eggs
  • 1½ cups caster sugar
  • 1 cup oil
  • 1 tsp vanilla extract
  • 2 cups self raising flour
  • ¼ cup jam
  • 3 large apples, peeled and sliced
  • 1 tbsp cinnamon sugar*
  • 1 tbsp caster sugar, for sprinkling
Method:
  • Preheat oven to 180C. Line a 24 cm round spring-form cake tin.
  • Using an electric mixer, beat the eggs and caster sugar until pale and creamy. Add the oil and vanilla and beat until just combined. Using a spatula, gently fold in the flour.
  • Pour half the batter into the cake tin, then dot with the jam and cover with half of the sliced apple. Sprinkle with cinnamon sugar. Top with the remaining batter then the remaining apple slices. Finally, sprinkle over the extra caster sugar.
  • Bake for 1 hour, then reduce temperature to 160C and bake for a further 30 minutes or until deep golden and a skewer inserted into the centre comes out clean. 
          *To make cinnamon sugar, combine 1 cup caster sugar with 2 tablespoons cinnamon.

Result: I loved this cake and so did my family - everyone kept saying "you'll have to make that again."
