Snickerdoodle Slice










 Introduction: I found this in an old community cookbook while looking for something quick, simple and tasty to make for my family when they asked me to make afternoon tea.

The Slice:

Ingredients: 
  • 2 cups of plain flour (I used white spelt flour)
  • 1 cup of caster sugar
  • 1 tablespoon of ground cinnamon
  • 2 teaspoons of baking powder
  • 1 cup of milk
  • 2 eggs
  • 125g of butter, melted
  • 3 tablespoons of sugar
  • 3 extra teaspoons of ground cinnamon  

Method:
  • Preheat the oven to 180 degrees Celisius
  • Lightly grease a 20cm by 30cm baking tin and line with baking paper hanging over the two long sides
  • Sift together the flour, caster sugar, cinnamon and baking powder and make a well in the centre
  • In a small bowl, whisk together the eggs and milk,
  • Pour egg mixture into the flour and mix with a metal spoon to roughly combining
  • Fold in the butter until smooth - do not over-mix.  
  • Spoon half of the mixture into the tin and level the surface.
  • Combine the sugar and extra cinnamon into cinnamon sugar and sprinkle two thirds over the mixture in the tin.
  • Gently spoon the remaining mixture over the top , then sprinkle the remaining cinnamon sugar over the surface.
  • Bake for 25 to 30 minutes or until firm.
  • Cool in the tin for 20 minutes and then lift on to a wire rack to cool. 
  • Cut into roughly 20 square slices.

New Methods Learnt:


    • Folding in ingredients and learning not to overmix

Result: It didn't last long which suggests everyone found it tasty. It was a beautiful, soft cake consistency.
