Introduction: I've always loved spaghetti carbonara, so wanted to try making my own, including the pasta from scratch and no cream in the pasta sauce! I used an electric pasta maker to make the spaghetti.
The Pasta:
Ingredients:
- 400g spelt flour
- 4 eggs
- cornflour to avoid pasta sticking together
Method:
- Using the pasta maker, add the flour to the mixing well and then slowly add the egg through the liquid shoot and then allow the pasta to extrude.
- Cut the pasta into 20cm long strands.
- Wash the cornflour off the pasta in a colander and then immediately cook the pasta (I use the "boil water, add pasta, place lid on pot, boil pit again and then turn off pot without removing lid for 5 to 10 minutes till al dente" method.
- Time cooking of pasta with completion of sauce.
The Sauce:
Ingredients:
- 4 eggs
- 300g bacon
- ½ cup Parmesan cheese, grated
Method:
- In a pot, fry bacon with a good amount of olive oil.
- Whisk eggs and mix in Parmesan cheese. Add a generous amount of pepper
- Once pasta is cooked, turn off the heat under the bacon and mix pasta in with bacon to get the bacon flavour coated around the pasta.
- Add egg mixture and mix around, coating the pasta. Make sure that your pot is not too hot or your eggs will scramble
- Enjoy with extra Parmesan cheese and pepper.

- Pasta extrusion
Result: I was so glad that I finally got to try to make this favourite of mine from scratch, including pasta from scratch. The result was delicious!
